PANCHO Y EMILIANO
When we started our restaurant ten years ago, we named it after two towering figures in Mexican history. Pancho Villa came from the north of the country, and Emiliano Zapata from the south. By honoring these men, we wish to show that our menu features cuisines from every corner of Mexico rather than a single region.
Our Co-owner and executive chef, Serena Prontack, was born in the state of Oaxaca, where she learned to cook at her mother’s knee, then refined her skills by working for several years in the family restaurant. From the beginning, she has designed our menu to feature dishes based on the artisanal cooking methods that are traditional in Mexican cuisine.
Located in the heart of the vibrant and multicultural Kensington Market district, we pride ourselves on using only the freshest ingredients in creating our dishes. Over the years, our menu has evolved to feature seasonal specialities as well as a variety of vegetarian options.
The hands of our highly skilled cooks are our proudest assets, and our dedicated servers stand ready to help you experience the flavours and pleasures of Mexican cooking in all its rich diversity.
